4-501.114 (B): (B) A chemical SANITIZER used in a SANITIZING solution for a manual or mechanical operation at contact times specified under ¶4-703.11(C) shall meet the criteria specified under §7-204.11 Sanitizers, Criteria, shall be used in accordance with the EPA- registered label use instructions, and shall be used as follows: An iodine solution shall have a: (B)
(1) Minimum temperature of 20°C (68°F), (2) pH of 5.0 or less or a pH no higher than the level for which the manufacturer specifies the solution is effective, and (3) Concentration between 12.5 MG/L and 25 MG/L. Sanitizer solution was being prepared by dipping a quat-treated cloth into water. This does not get the water to the appropriate concentration of quat sanitizer. Since the mechanical dispenser is not in use, each bucket of sanitizer must be mixed by hand and tested with the appropriate test strips. - (Correct By: Jan 27, 2022) |

WORK HAS BEGUN ON A DEMOLITION AND REMODEL OF THE KITCHEN AND CAFETERIA FACILITY. NO PLAN REVIEW HAS BEEN FILED WITH THE HEALTH DEPARTMENT.
FOOD IS BEING PREPARED DAILY AND DELIVERED UP TO THREE TIMES PER DAY FROM KENNEDY MIDDLE SCHOOL. FOOD IS BEING SERVED IN THE BACK GYM. THERE ARE THREE COLD HOLDING UNITS AND THREE HOT HOLDING UNITS. SERVICE OCCURS OUT OF THREE INSULATED CARTS. ONLY COLD FOODS WERE SERVED FOR TODAY'S LUNCH. THERE IS NO 3-COMPARTMENT SINK AVAILABLE FOR WASHING UTENSILS. THERE IS NO EQUIPMENT THAT NEED TO BE WASHED FOLLOWING FOOD SERVICE, AS ALL FOOD IS DELIVERED IN DISPOSABLE PANS. ALL UTENSILS ARE RETURNED TO KENNEDY TO BE WASHED. USING SINGLE USE SERVING UTENSILS WILL ELIMINATE THE NEED FOR A 3-COMPARTMENT SINK FOR WAREWASHING. A PLAN REVIEW MUST BE SUBMITTED IMMEDIATELY. A COPY WILL BE PROVIDED TO THE DISTRICT FOOD SERVICE OFFICE. |
